PARAGON 2018
Our Barley Wine is the most special beer we make, being produced only once every year. It’s a blend of different bourbon barrel-aged vintages that have spent more than a year in wood. We blend the different barrels, and add a bit of freshly brewed Barley Wine to obtain the best possible version. This year, the Barley Wine was brewed using a double-boil technique in which we evaporate the beer to a high concentration of sugar, add water back to the wort, and then boil it down again to increase Maillard reaction processes and build up some intense caramelization. We went easy on the hops to allow the malt and bourbon characteristics inherited from the barrels to be the champions of this beer. The aromas and flavours are intense, and should be enjoyed slowly by serving at room temperature to allow even more layered nuances to shine through and add to the beautiful complexity of this beer. We hope you enjoy this as much as we do. INGREDIENTS Malts: Munich, Caramel, chocolate Hops: Styrian Goldings Yeast: Ale BEST BEFORE 120 months, 10 years (perfect for cellaring) APPEARENCE Dark red / brown. Tan head with copper laces. AROMA Dried fruits (figs, prune, raisins), caramel, oak, bourbon, molasses, vanilla, coconut and more. FLAVOUR Similar to aroma. Caramel, dark fruits, sweet oak and bourbon. BODY Intense but not overly, powerful and sweet but not cloying. Balanced.
Reforged XX
Commemorating our 20th Anniversary and the creation of our new brewery, we pay homage to the ol' days by introducing our first ever barrel-aged blend. Reforged 20th Anniversary Ale is a triple-barrel fusion of our three original high-gravity beers: Wee Heavy (Scotch Ale), Speedway Stout (Imperial Stout w/coffee), and Old Numbskull (Barley wine). A proprietary blend was carefully established by AleSmith's elite Sensory Team of BJCP Beer Judges and Brew Team members. The result: A 100% barrel-aged brew which balances the oaky, rich flavors of bourbon with Wee Heavy's vanilla notes, Speedway's chocolatey coffee layers, and Old Numbskull's caramel undertones. Share and celebrate this exclusive specialty with friends and family now or age at a cool temperature to enhance the beer's numerous complexities. Cheers to twenty years!
Noble Empire
In our 20th year, we had the good fortune to grow, expand, and relocate to our new home on what was originally named Empire Street. The city soon recognized us by renaming that street to AleSmith Court, a rare honor. Now at our larger facility, we continue to explore our passion for complex beers and expand our barrel-aging program. We have thus created Noble Empire, a brawny, complex, imperial version of a traditional English-style porter as a tribute to craftsmanship of the highest quality. Rich with chocolaty flavors derived from a variety of specialty malts, this beer has patiently found the delicate balance between sweet notes of vanilla and toast from the bourbon barrels. Enjoy this tribute to the former Empire Street and its noble evolution for the sake of craft beer. Cheers!

Carlsberg
Probably the best beer in the world, and the flagship brand in Carlsberg Group's portfolio. A regular in millions of bars across 140 countries worldwide, it is a truly international beer brand. Hordeum vulgare. That’s the Latin name for barley, but there’s nothing vulgar about it. In fact, it is a rather special malting barley we use. We have our own Barley Breeding Group, which works in close contact with our brewmasters. The group selects the barley with the best traits and grows it in our research fields, using only traditional breeding methods, 100% free of genetic modifications. Considering that Carlsberg is made from 100% pure malt i.e. no adjuncts it could take some years before we breed the necessary amount of barley. Probably worth the effort. Hops are our secret ingredient. Of course it is no secret that we use hops in our beer, but the types we use are prepared according to a secret recipe that’s exclusive to us. It’s called the Carlsberg Aroma Hop Extract and nobody but us at Carlsberg can use it. After all, there can only be one best beer in the world. Yeast is at the heart of our history. In 1879, Carlsberg was the first brewery to produce a purified brewer’s yeast, the Saccharomyces Carlsbergensis. Since then we’ve been constantly working to improve our yeast’s taste and the stability of our beer. We do it by using a classic breeding method, which means it can take up to 20 trials and several years to obtain a new yeast strain that’s good enough for brewing
