Bourbon barrel-aged salted peanut imperial stout 13.3% Last year, Amundsen (Oslo) visited us and we put a velvety imperial stout into freshly emptied bourbon barrels. After 14 months, we pulled the beer and added over a quarter-tonne of peanuts. A touch of salt provides the perfect balance to the sweet and savory roasted-nut flavor, while the bourbon gives finishing notes of vanilla, oak and caramel.

Coconut Coffee Stout By Rackhouse

This beer is defined by a natural marriage of coconut, rum and bourbon which produce aromas of coconut cream pie. Upon the first sip, light notes of honey and spice dance on the tongue before freshly-brewed coffee intertwines with the dominant toasted coconut flavours. The finish has a boozy edge which is softened by vanilla-forward sweetness and oak lactones from both the coconut and 14 months in bourbon & rum barrels.

Original Sin Québécois Maple Barrel By Rackhouse

Last year we put our deeply chocolate Original Sin base into barrels that had been used for aging maple syrup in Québec, Canada. The leftover syrup in the barrels gives a confectionary punch to this imperial stout. This is balanced out by tobacco and toasted oak notes from the wood which had originally been used for bourbon. A delicate note of maple syrup rounds out this complex and sinfully rich beer. Santé! Serving: Snifter glass. 8°C

Off the Rack Paragon By Rackhouse

Off the Rack Paragon represents the finest barley wine we have to offer. After ageing in Tennessee whiskey barrels for 16 months, we selected only our favourite barrels for this edition. Coconut, vanilla, bourbon, toffee, prunes, chocolate, oak, and caramel all interplay to deep complexity while remaining in balance with one another. Serving at room temperature allows even more layered nuances to shine through.

Paragon Off the Rack Maple Bourbon Barrel By Rackhouse

This barley wine was aged in freshly emptied maple syrup barrels from Canada (that had previously been used to age bourbon), and is set apart from it’s sibling beers Paragon 2021 & Off the Rack Paragon Rum barrel by it’s much sweeter body. This plays brilliantly with the obvious maple flavours imparted by the barrels as well as classic barley wine notes of treacle, prunes, marzipan, spices and vanilla with oak flavours lingering in the background.

Poterie – Scotch Barrel-Aged (2016)

Poterie is French for “pottery”, the traditional eight-year anniversary gift. Our eighth anniversary ale, Poterie, follows in the footsteps of our anniversary releases before it, which are loosely based on an English-style old ale and fermented with our house yeast strain. This edition was 100% aged in oak barrels that previously held Scotch, imparting a subtle smoky complexity to complement the robust flavors of toffee, caramel, dark fruit, vanilla and oak.

TIMES 8 Bourbon Barrel Aged

Bourbon barrel-aged Times 8 collaboration with Stillwater Artisanal (US) When we made the original Times 8, we thought we could kill craft with a beer that brought an over-the-top, 16% ABV imperial pasty stout together with a Willy Wonka assortment of vanilla, cocoa, maple syrup, butterscotch and coconut. But once again, we were mistaken – we forgot to age it in barrels. So to put the cherry on top of this ridiculous collab, we placed the beer in fresh bourbon barrels for a year to suck out all of the spicy, vanilla oaky notes and smooth, boozy finish. We’re sure you’re going to love this monster of a stout – just make sure you bring an insulin shot and a pint of Pilsner to wash it down.
